Eggnog

Fresh homemade eggnog. Eggnog latte here we come! Someone hold the phone while I faint for just a second.

If you have a @breville or @nespresso or @aeropress @the_chemex or @cuisinart you’ll want to either brew a shot or two or four or six, no one is judging you, it’s Christmas time after all, or just brew REALLY strong coffee for this recipe. If you’re not a coffee drinker, have no fear! I love to use @stashtea Double Spice Chai tea!! 

My guilty pleasure is almost a 50:50 ratio - half eggnog and half espresso/strong coffee. But you’ll find the balance that you like best. Add a dollop of foamy milk/milk alternative or drink straight. Or add some extra booze because y’all! It’s Christmas time! You get to choose - you do you y’all. No one will judge you. And if they do, offer them an eggnog latte with a double splash of extra booze and they won’t be judging you soon.

Recipe

  • 12 large eggs, separated 

  • 1 1/2 cups sugar 

  • 4 cups whole milk 

  • 6 cups heavy cream 

  • 3 cups bourbon 

  • 1/2 cup dark rum 

  • 2 cups cognac 

  • Freshly grated nutmeg 

In a very large bowl, beat egg yolks until thick and pale yellow. Gradually add sugar to yolks. With a wire whisk, beat in milk and 1-quart cream. Add bourbon, rum, and cognac, stirring constantly. 

Just before serving, beat egg whites until stiff. Fold into mixture. Whip remaining heavy cream until stiff and fold in. Sprinkle with nutmeg. 

You can choose to pasteurize this recipe by tempering the egg mixture first. You’ll heat your cream mixture first and add a very small ladle of the warm cream to your egg mixture first, adding a little more while stirring to slowly bring your egg mixture up to temp so you don’t curdle the eggs. This is called tempering. Once it’s warm to the touch add it to your big pot and continue simmering for just a few minutes, then add your alcohol!! 

If you want to preserve your alcohol turn off the heat and do not cook the alcohol out but if you want the flavor of the alcohol but not have it boozy then continue simmering for about 5 minutes. This extra simmering will ensure your kiddos can drink it. I like to make two batches though. An adult version and a kid-friendly version.
